Brown Sugar Cookies Makes 9 Dozen
2 1/4 cups brown sugar
1 cup margarine/shortening
3 eggs
1 tsp baking soda
1 tsp cinnamon
4 cups flour
Cream sugar and margarine. Add eggs and beat well.
Add soda, cinnamon and flour. Mix well and chill for several hours.
Roll thinly on floured board and cut with cookie cutters.
Bake at 350 for 5 minutes.
Molasses Cookies (Makes 8 Dozen)
1 cup shortening
1/2 lb light brown sugar
1 pint dark baking molasses (usually called Brer Rabbit brand - NOT used on
biscuits - bitter)
2 cups buttermilk (I use regular milk - add a TBS of vinegar to it)
6 cups flour
1 TBS baking soda
Cream shortening and sugar. Add molases and buttermilk.
Stir in flour and baking soda
Drop in large dollops from teaspoon onto cookie sheet.
Bake at 375 for 8 minutes
Oatmeal Peanut Butter Bursts
1 cup shortening
1 cup brown sugar
1 cup sugar
1 cup peanut butter
3 eggs
1 1/2 cups flour
1 tsp salt
1 tsp baking soda
1 tsp vanilla
2 cups quick oats (cereal)
1 cup chocolate chips or raisins
Cream shortening and sugars. Add eggs and peanut butter and beat well
Gradually add flour, salt, and soda. Add vanilla. Stir in oats and chocoalte
ships/raisins
Drop by heaping teaspoons onto cookie sheet
Bake at 350 for 10 minutes.
